Oi Kimchi (Cucumber Kimchi)
Something that was a staple for my family growing up (and now at my own table) is Oi Kimchi- a quick, refreshing, crunchy side dish. Unlike traditional cabbage kimchi, this version comes together very quickly and can be served same-day (or same hour!)Â Please be advised that I've adapted this "recipe" from my mom's very specific measurements of "a little of this" and "umm..some of that" sooo proceed with caution đ.
makes 3-4 side servings
Ingredients:
4-5 small/mini cucumbers cut into 1/2 inch slices (although you can definitely use a bigger one, you may just want to dice it into 4/per slice)
2 garlic cloves minced
1 green onion thinly sliced
2 tbs of Gochugaru (Korean chili flakes)
2 tbs of shredded carrots
2-3 tbs of soy sauce
1 tbs of vinegar (i use red wine or rice)
2-3 tsp of sugar
1 tsp of salt
Directions
Combine all of your ingredients in a bowl and mix so everything is covered. I would let it sit for at least 10 minutes-- the salt makes the cucumbers sweat a bit which helps with the coating of all the other ingredients onto the cucumber. Taste and adjust seasoning to your liking.

I bought a new planner this week!
Longtime readers know Iâm obsessed with my Passion Planner, but I couldnât resist the beauty and intrigue of this Astrological Planner from MagicOfI.com âŠ
Iâve never really been that into astrology, but my daughter Mallory is, and when I was going to gift her with one, on a whim I âadded to cartâ for myself.
The website promised the planner is âa powerful tool for creating magic and living in alignment with the cosmos. Navigate with the planets and moon cycles while being grounded and appreciative of the earth.â
Living by the beach and my new-found passion for stand-up paddle boarding, Iâve found myself more in tune with the natural cycles of the tide, moon and stars. So Iâm curious to explore a bit more. Iâll let you know how it goes!
All right, here goes. The embarrassing mistake that caused me to frog my whole Balloon Cardi and start over.
The pattern by PetiteKnit calls for establishing 4 raglan stitches, then increasing on either side of each raglan stitch 30-something times.
Well I was about 12 rounds in when I was reminded of the importance of knowing whether the increases happen BEFORE or AFTER the marker.
I placed a marker on either side of each raglan stitch, and I was slipping the marker, THEN increasing, then knitting the raglan stitch, increasing again and THEN slipping the second marker. (Slip marker, M1R, knit raglan stitch, M1L, slip marker).
So the area between each raglan marker was growing.
In the words of Pretty WomanâŠbig mistake.
I needed to make the increases on the OUTSIDE of the markers, not the inside. So the correct way is M1R, slip marker, knit raglan stitch, slip marker, M1L.
Yep, that one little mistake cost me hours of knitting time.
But Iâm back on track - see photo below! And I hope my mistake saves you from the same frogging fate.

OMG Salad Dressing
Hot Luke and I had some friends over for dinner last week. To me, his steaks were the star of the show (he cooks the best steak Iâve ever hadâŠwhich is no small compliment, considering I got to eat all kinds of award-winning steak when we filmed BBQStars a few years back).
But guess what? They couldnât stop raving about my salad dressing.
Whaaaat?
Itâs so simple, Iâve never shared it here. But on the other hand, itâs so simple that you NEED it in your weeknight arsenal!
Œ cup apple cider vinegar (or red wine vinegar, white wine vinegar or balsamic vinegar)
œ cup good olive oil
1 T grainy brown mustard
1 T freshly minced garlic
1 t kosher salt
Several grinds fresh pepper
Optional: 1-2 T shredded parmesan
Shake all of the above in a mason jar. Drizzle over salad greens. So delicious, no other ingredients are needed! But feel free to add from your fridge - marinated artichoke hearts, olives, small diced red onion, halved grape tomatoes, diced seeded cucumber.

I just finished up âLessons in Chemistryâ by Bonnie Garmus which was a fun and feminist beach-read break from my usual nonfiction reads.
To me, the long, lazier days of summer are a great time to depart from the norm and read something you wouldnât usually have time for.

Last week, I kicked off an impromptu make-a-long of the Balloon Cardigan by PetiteKnit.
Iâm loving this project so much! The new Moondrake âArupakaâ together with the Urth âSweet 16â feels like knitting with a cloud. (Except, I imagine, less damp and more cozy than an actual cloud.)
And the pattern has a unique construction that starts with the neckband and builds into a raglan. Itâs a really well-written, fun knit and Iâm super motivated to wear the finished project.
Even so, Iâm sure itâll take me the balance of the summer to finish - so thereâs still plenty of time to jump in on the make-along with me.Â

I recently re-discovered Americaâs sweetheart on the Food Network, and every recipe has my mouth watering! This Grilled Corn and Bean Salad is going straight into my summer beachside rotation.

Hot Luke and I are not moving to Montana, yâall.Â
Not that thereâs anything wrong with Montana.Â
Itâs just that, for more than a year, weâve lived in a 300-sq-ft temporary space in South Florida where I didnât know a soul, and he left each morning before sunrise and returned after sunset from the same high-risk, high-stress job that had kept him from having a real home for more than 30 years.Â
And every moment we longed to be at our home by the sea that sat empty, 500 miles away.
When that job wound up last month, his boss told us we were moving to Montana.
And yet here we are, living at our place by the beach. Finally, we are home.
Iâm going to tell you how this happened, in hopes that it might empower you to make a change youâve been hoping-dreaming-praying for in your own life.
But first, Iâll show you the sweater I cast-on to celebrate. đ
I ran across âBalloon Cardiganâ by PetiteKnit a few weeks back, but I wouldnât allow myself to cast on until I had finished my âTrinigan.â
Then, when Montana didnât happen I thought, it may be awhile âtil I need a warm sweater. Time to cast on something lighter!
I wanted to use a non-superwash fingering held together with something fluffy. So I went to the softest wool in our store - our custom âSweet 16â from Urth Yarns. Itâs called Sweet 16 because itâs only 16 microns. The lower the microns, the softer the wool. Even longtime yarnies canât believe it isnât cashmere, the hand is so light and soft! But it has the memory and springy-ness of wool. Win-win.
For the fluffy yarn, I was going to go with Moondrakeâs Suri Silk Cloud but then Rachelle told me she has a new, similar base thatâs even softer and fluffier. So Iâm holding together Arupaka in Rose Quartz together with Urth Sweet 16 in Sand.
I just swatched and itâs going to be so perfect!

In the end, it all came down to one little word. Two tiny letters. But it can be the hardest, scariest word of all.
âNO.â
We simply said no thank you to Montana. No to someone else dictating our life. We packed up our stuff and drove to our beach home and said âweâll figure it out.â
Itâs one thing to want a bigger, better life. You can dream it, you can even plan it. But getting past that one big, necessary NO can take months, years, decades. Sometimes it just never happens.
Itâs been 30 years since I said that first NO, leaving my ad agency paycheck and starting my own copywriting business. Itâs easy to forget how terrifying that was.Â
So I was honestly in awe, watching Luke gather the strength for that NO. But guess what happened?
Within just a few days, he had not one job offer, but four.Â
And the one he chose allows him to work from our home.
Thatâs how the universe works so often, right? A window is waiting to openâŠ
But first youâve got to shut a door.

Grainy Mustard Salmon
Itâs not been too long since I shared a version of this recipe. But itâs become such a simple, weekly staple for us, I wanted to lift it up to you again - with a twist.Â
All you do is brush salmon filets with olive oil, season generously with kosher salt and pepper, then spread about a teaspoon of course, grainy mustard on top (the grainy mustard is the simple - but oh-so-good - twist on the original recipe). Bake at 425° for twenty minutes or to your liking. THATâS IT! Thatâs the whole recipe. And I swear itâs my favorite recipe ever for salmon.
This week we served it on a celery root puree with a side of steamed asparagus (tossed in a little butter, salt, pepper and shredded parm). A perfect dinner in under 30 minutes. Win!

âFrom Wavelength, someone saw the design and thought it looked like sound waves, sound waves for our voices. Everyone has a voice, big or small, and every voice has value and how we use it is important. Wavelength is used to measure the length of sound waves while frequency is used to measure the recurrence of sound waves. One definition of frequency is âthe number of cycles per unit time of a wave, like the number of times a colorwork pattern repeats within the stitch amount - perfect for a stranded colorwork sweater!â

Dawning Top by Ainur Berkimbayeva was inspired by the sense of renewal and new beginnings that comes with the season of spring as well as the summer mornings. The spokes radiating from the neck symbolize sun rays, and the little eyelets are like the dew you see on fresh grass when you go outside, right when the sun is coming up.Â
You will work this halter top by Ainur Berkimbayeva from the top-down. First, you will work the neckband in the round, then separate the front and back to work them flat to the underarm, and then join the front and back to work the body in the round.

My New Favorite Way to Eat Eggs!
Where has this super-simple hack been all my life?
My new favorite way to eat eggs is over a simple veggie hash. When roasting veggies for dinner, simply make more than you need. Any firm veggies are great! For this hash we used:
We tossed it all with olive oil, salt and pepper and roasted at 425° for about 30 minutes (we added the broccoli at the 15 minute mark). It was plenty for dinner for 2 along with a grilled protein.
Then the next morning, we took the leftover veggies and sauteed them in a tiny bit of oil to get them hot. Cooked eggs to our liking and tossed them on the hash, topped with a bit of our favorite hot sauce. BOOM a fast, high-protein, flavor-packed breakfast that would be great as breakfast-for-dinner as well.

]]>Since we opened the doors of our first yarn store in 2005, youâve watched my youngest, Mallory, grow up.
Funny story: Mal has always been a bit of a reluctant model. At the photo shoot for the very first Hot Loops Wall, she got annoyed and stuck her tongue out. We instantly knew we had the perfect photo for our store banner! But she knew it, too - and renegotiated on the spot to double her fee.Â
Is it any wonder sheâs graduating with a major in business (with a minor in social and economic justice)?
As we traveled together through the murky waters of adolescence, there were some reluctant photo shoots that tested both our patience.
And some moments where, looking through the lens, my breath would catch - as I got a glimpse of the future and the woman she would become.
And a memorable one on the beach of Punta Cana during her high school senior trip, after they all partied to 4am (well it was memorable for me, anyway!)
It was Mallory who gave me the courage to get on my first overseas flight to film for Knit Stars, and weâve been so fortunate to be together in places beyond my wildest dreams, sharing the adventures with our Masterclass owners.
Sheâs grown into a fierce and fearless, kind and compassionate young woman whoâs determined to find a way to âdo business for good.â Her father and I could not be prouder.
And youâve been a big part of her journey.
Iâve long since lost count of how many times Iâve heard over the years, as someone checks out with a bagful of hand-dyed yarn, âIâm helping put your kids through college.â đ
But the truth is, you did help.
You helped her learn to work hard, hauling boxes, shelving yarn and reluctantly modeling from age six on.
You helped her learn the thrill of making her own clothes that expresses her own unique style.
You helped her embrace her inner sense of adventure and find her inner artist.

For this weekâs recipe, I asked Mallory her favorite thing I cooked for her growing up. Lucky for you, she reminded me of this super-simple, quick-to-make salad that was her weekly request! All you need is a rotisserie chicken from the market and the stuff for the dressing, which is the real star here - the rest can be any combination of greens and veggies in your fridge.

My dear friend Ira and her hubby Caleb celebrated the arrival of their first baby, Michael, a few weeks back.
Early on in her pregnancy, I gave her a cute felted mobile with Peruvian alpacas circling aroundâŠbut she couldnât help it, her face fell a bitâŠ
âI was hoping you would make us a blanketâ she said.
The problem was, Iâve had an injured finger and itâs been in a splint the past 6 weeks, in an effort to avoid surgery. But you know what we sayâŠ
âKnitters Find A WayââŠright?
Iâm supposed to keep my pointer finger immobilized. So I played around with using my middle finger, but had trouble âwrapping.â
The final answer? An adaptive method Iâve dubbed the âcontinental bird.â đ€Ł
You can literally mix and match any 1 skein of solid Cumulus yarn and 1 skein of Cumulus Rainbow and you will get an awesome blanket. Coordinating or contrasting - all the colors work together!

For this weekâs recipe, weâre sticking with the Slide theme! May we present Pull-Apart Spinach and Artichoke Dip Sliders! They take only 15 minutes to put together, then bake for an hour (yay knitting time!). Weâre betting these go onto your regular appetizer/party rotation. If you make them - or cast on a Cumulus blanket - please snap a photo and tag us @knitstars!Â
1 head garlic
extra virgin olive oil
1 package (12-count) dinner rolls, halved lengthwise
6 ounces cream cheese, at room temperature
1/4 cup sour cream
10 ounces frozen chopped spinach, thawed, and squeezed dry of excess water
1 jar marinated artichokes, chopped
1 cup shredded fontina or mozzarella cheese
1/3 cup grated parmesan or asiago cheese
1 teaspoon onion powder
kosher salt and black pepper (to taste)
chili flakes (to taste)
pickled jalapeños (optional)
3 tablespoons salted butter, at room temp or melted
1 teaspoon dried oregano
1 teaspoon dried parsley
Instructions
1. Preheat the oven to 400° F.
2. Slice off the top portion of the garlic head to expose some of the cloves. Place the garlic on a piece of foil. Drizzle with olive oil, wrap it up, and bake for 40-55 minutes, until deeply golden and very soft.
3. Meanwhile, in a bowl mix together the cream cheese, sour cream, spinach, artichokes, half of the mozzarella, half of the parmesan, and the onion powder. Season with salt, pepper, and chili flakes (to taste).
4. Place the bottom half of the dinner rolls onto a baking sheet lined with parchment. Top with spinach dip, then the remaining mozzarella. Arrange the jalapeños on top. Place the top half of the roll over the cheese.Â
5. Let the garlic cool, then squeeze the cloves out into a bowl. Add the butter, remaining parmesan, oregano, parsley, and chili flakes (to taste). Mash the cloves into the butter with a fork. Spread the butter over the top of the rolls. Cover the rolls and bake 10 minutes. Remove the foil and continue baking another 10 minutes, until the cheese has melted.
6. Brush with any remaining garlic butter, serve immediately

The result?Â
Not only was the hat reversible with a graphic on one side and words on the other, but the letters were cursive which held even more significance for Mary.
âSome people said I could have done simple block letteringâŠbut cancer tries to suck us til weâre drained of anything beautiful and we need to maintain our beautyâŠ[cancer,] you are not taking away how beautiful I am.â
I love what Mary shared in the LIVE about how small, incremental changes can make huge differences - something we all can relate to as makers. She proved how these small changes can make our knits so much more special. Beyond the beauty that drapes on our shoulders, sits on our heads or hugs our body, handmade projects hug our souls.Â
Then the LIVE zoom chat exploded with Yarnies sharing similar battles of their own or battles their loved ones were enduring. So many words of encouragement and solidarity were flowing so quickly, it was almost impossible to read them all in real time.Â
And that conversation started because of a hat.Â
It never ceases to amaze me what can happen when you put together a piece of string, a tool and a bunch of like-minded, creative people.Â

"This recipe was already in an email because I share it so often. This is my mother in law's recipe. All my favourite cookie recipes are from my mother in law. These cookies became really well known in my kids' schools because they were a part of every event/tournament that my kids attended. They are yummy, easy to share and the oats did the trick when the kids were hangry."

Chocolate Chip Oatmeal Cookies
1 C Butter
1 C White sugar
1 C Brown sugar
2 Eggs
1 tsp Salt
1 tsp Baking soda
1 tsp Vanilla
1 1/2 C Flour
3 C Quick Oats
1 1/2 C Chocolate chips
Cream butter and sugar.
Mix in eggs and vanilla.
Add flour, salt and baking soda. Mix well
Add oats 1 cup at a time. Mix well after each addition.
Add chocolate chips.
Drop by spoonful onto a greased baking sheet (makes 5 dozen)
Bake at 350 for 10-12 minutes.
Now hereâs the brilliant thing we realized about this little powerhouse of a projectâŠ

Copy Cat Red Lobster Brussel Sprouts

Bolognese Sauce
This week I had a craving for a good bolognese sauce, so âLukeâ and I did some quick research and found this recipe from The New York Times. The description read: âAfter the death in 2013 of Marcella Hazan, the cookbook author who changed the way Americans cook Italian food, The Times asked readers which of her recipes had become staples in their kitchens. Many people answered with one word: âBolognese.ââÂ
This recipe appeared in Ms. Hazanâs book âThe Essentials of Classic Italian Cuisine,â and one reader called it âthe gold standard.â So we tried it - and it was a big winner! We served it over angel hair and also some spaghetti squash. Also, we only simmered it about an hour, since one reader commented it would be 97.32% as good that way. It was! Try it for yourself and see.
Yield: 2 heaping cups, for about 6 servings and 1œ pounds pasta

Nearly a year ago, I left Tulsa - the town where (not counting college) Iâd lived since birth. The town where I raised my children, the town where I opened my first yarn shop.
The town where I started a movement to knit the world together.
Why did I leave?
I fell in love. First, a long time ago, with a dream of living by the sea. And second, much more recently, with a man who lives by the sea.
So I packed up and moved to a 300-sq-ft cottage in Florida, leaving most of my yarn stash -Â and all of my yarn friends - behind.
My new loveâs job requires long workdays, so I had lots of time to think, work and knit - alone. His job also requires frequent moves, so I was hesitant to make the long drive to the nearest yarn shop and try to make new yarn friends.
I taught him to knit, which was really cool for airplane trips - but honestly, not quite the same.
I missed those times on the Knit Stars Flagship couch, or at a coffee shop with yarn friends, working and chatting and noshing together.
And then I found myself knitting less. And less still.
Finally, over the past couple of months, Iâve felt my mojo returning.Â
Why did I leave?

Itâs seeing all those creative folks knitting and crocheting away together, connecting in a very real way around what we do - not just with our hands, but with our hearts.
This experience has reminded me how absolutely essential it is to not only nurture your creativity, but do so in community. And itâs lit a fire in me to make the Yarniverse the place to be in the yarn world - with the very best of learning, community and connection accessible year-round to all.

Soft and Fluffy Pumpkin Pancakes

The best part is, is that it works with all types of pancakes so when I decided to make these Pumpkin Pancakes from the New York Times, I knew they would be a hit at the breakfast table. Ingredients
1œ cups/192 grams all-purpose flour

Sunnie here, and when I heard March was crochet month, I was elated.
Why, you ask?
Because last month, I finished my FIRST crochet garmentâŠ

Chicken (or not!)- and- Collards PilauÂ

This recipe has been our go recipe for tired evenings, using up veggies and having leftovers (or feeding a lot of people!) It is super simple, is done in 1 pot and is a crowd favorite! I altered the title of this recipe because I don't eat meat and love this recipe because it's just as good without it! You can also sautĂ© up any other veggies you may have laying around or use kale as a collards alternative. This is a beautiful canvas for creating a very pleasing and low-lift dinner.Â
Ingredients
6 ounces Cajun smoked sausage, diced
1 1/2 pounds skinned and boned chicken thighs, cubed
1 1/4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon olive oil
1 cup chopped sweet onion
1 cup chopped celery
1 cup chopped carrot
2Â garlic cloves, minced
3 cups organic vegetable broth
4 cups firmly packed chopped fresh collard greens
2 cups uncooked basmati rice
1/2 teaspoon dried crushed red pepper
Directions
Preheat oven to 350°. Cook sausage in a Dutch oven over medium-high heat, stirring often, 5 to 7 minutes or until browned. Remove sausage using a slotted spoon; reserve drippings in Dutch oven. Drain sausage on paper towels.
Sprinkle chicken with salt and pepper. Add oil to hot drippings in Dutch oven, and cook chicken in hot drippings over medium-high heat, stirring occasionally, 8 to 10 minutes or until done. Add onion and next 3 ingredients. Cook, stirring often, 5 to 7 minutes or until onion is tender. Stir in broth, next 3 ingredients, and sausage.
Bring mixture to a boil over medium-high heat. Remove from heat; cover.
Bake pilau at 350° for 20 to 25 minutes or until liquid is absorbed, stirring halfway through. Serve pilau immediately.

Sunnie here! Do you ever just crave the perfect cookie? I certainly do and this cookie has been my go-to for about 3 years now. These cookies are chewy, and crispy and absolutely fabulous. You'll feel like you've been transported to your favorite café or bakery in an instant! And the best part? You get to slam the cookie sheet down on the counter/oven top to get these beautiful crinkles! Trust me, it's pretty fun. I love to make a batch of these, portion them and then freeze them. This way, I can pull out 1 cookie when I just need something sweet, pop it in the oven and I have a perfect homemade cookie without all the mess. You probably need to increase the cooking time by 2-5 minutes depending on your oven if you are making straight from the freezer. Enjoy!

Just the other day, an email from a faithful newsletter reader named Dez dropped into my inbox. She was responding to a recent issue of Moving the Needle titled The sweater youâll wear 24/7. Iâve excerpted her very thoughtful letter for you here.
âThank you for calling my attention to the Granito pattern! Looks like an excellent wardrobe staple,â Dez wrote.
âI think, however, that it might be a good topic one day to talk about WHY so many knitters only wear certain garments to knitting events like Stitches or fiber festivals. What stops some people from wearing a bold design? Why SHOULDN'T we rock a Stephen West shawl to the classroom or the boardroom? Why are so many people afraid of color? This is not a good thing.
Why do so many knitters hide their best, most dazzling work in the closet and only take those gorgeous garments out around other knitters? To me this is a feminist issue. Most knitters are women. For so long we have been culturally conditioned to step back, to stand in the wings, to be modest ... to shade our light so as not to outshine men. Let's address the REASON those works of art languish in closets.
Let's see an article encouraging knitters to be confident in wearing those amazing designs we all put so much time and love into. Wear that dazzling shawl out to dinner with a solid-color dress. Wear Ghost Horses to work on casual Friday.

When I searched Ravelry for âcolorfulâ this project popped up -Â and it just released this week, from the master of color himself, Stephen West!
âFragmentation Shawlâ is a top-down shawl composed of seven vertical wedges. Knit each wedge individually as you stripe your colors. Each new wedge is attached to the previous section using a simple modular technique, so you only work one color at a time.Â
You can easily customize the size by knitting more stripes for a larger shawl. The squishy garter stitch is framed with I-cord edges, resulting in a beautiful large shawl size.

 Chipotle Honey Salmon Bowls
ingredients:
AVOCADO FETA SALAD
CHIPOTLE MAYO
Instructions:
1. Preheat the oven to 450° F.
2. On a baking sheet, toss the salmon pieces with 3 tablespoons olive oil, chipotle in adobo, 2 tablespoons honey, tamari (or soy sauce), and a pinch each of salt and pepper. Arrange in a single layer. Roast 10-15 minutes or until the salmon is cooked to your liking. During the last minute, switch the oven to broil and broil until lightly charred. Set the salmon aside.
3. In a small bowl, whisk together 3 tablespoons olive oil, 2 teaspoons honey, and the apple cider vinegar. Stir in the cilantro and season with salt and pepper. Set the sauce aside for serving.
4. To make the salad. Combine the avocado, cucumbers, serrano pepper, cilantro, cumin, and feta in a bowl. Toss with the olive oil, lime, lemon juice, and season with salt.
5. For the mayo, combine all ingredients in a bowl.
6. Spoon the salmon over the bowls of rice. Top with the avocado salad and drizzle the cilantro lime sauce over everyting. Add a dollop of spicy mayo. Enjoy!

The Alpaca-lypse! đŠ
In this weekâs Yarniverse LIVE!, hosted by Knit Stars Gaye Glasspie (@ggmadeit) and Louis Boria (@brooklynboyknits), there were so many great moments.Â
Louis gave us a sneak peek of his runway look for VK LiveâŠ
He talked about why he said âyesâ to Knit Stars⊠(spoiler alert: âWhy not?!â)
He opened up his project bag and showed us his ânotion commotionâ including his favorite stretchy stitch markers that looked like little hair tiesâŠ
And then he showed what he packs in his carry-on when he travels from Spain to the US, saying "I pack all my Barbara Walker books AND two needle sets, because I always think, what if there's an apocalypse?"
So I asked, wait, wouldn't that be an Alpaca-lypse? đŠđ€Ł
But seriously, all dad jokes asideâŠ
It seems like lately weâve heard of more yarn business closings than usual.
And while platforms like Ravelry and Instagram have helped many indie dyers and designers grow and thrive, many more are struggling to balance the demands of creation and running a business.
It can all feel a little alpaca-lyptic...and it makes me more sure than ever that the world needs the Knit Stars Yarniverse.Â

How about making these supercute "Bottoms Up" socks by Knit Star Laura Nelkin? Theyâre worked from the toe up with a brioche toe and sturdy heel. Itâs the perfect way to "dip your toe" into brioche! But if youâd rather not, the pattern also has a simplified version with a 2-color toe and ribbed heel.

The stitch is easier than it looks - a simple, 3-stitch lace pattern. This stitch can look more difficult than it really is. You will see that it is quite simple when you try it.

Brown Butter Lobster Ravioli with Tomato Cream Sauce
Ingredients
TOMATO CREAM SAUCE
1. To make the ravioli. Bring a large pot of salted water to a boil. Add the lobster tails and shrimp and cook until the shells turn bright red and the shrimp pink, about 5-8 minutes. Remove from the water using tongs. Let cool and then remove the lobster meat from the shell. Finely chop both the lobster meat and shrimp.
2. In a large skillet, brown the butter over medium heat, stirring often until the butter is golden and toasted. Add the garlic and crushed red pepper and cook another minute. Remove from the heat and stir in the lobster, shrimp, parsley, lemon juice, lemon zest, and a pinch each of salt and pepper. Add the ricotta cheese and mix to combine. Set the filling aside.
3. Roll your pasta dough into lasagna sheets. Place 1 tablespoon of filling one inch apart over half the pasta sheet. Brush around the filling with water to moisten and then fold the sheet over the fillings, pressing down to seal. Cut into squares. Be sure to keep the ravioli covered as you work to prevent them from drying out. Repeat with remaining dough and filling. Alternately, you can make the ravioli in a ravioli press, or use this wonton wrapper method.
4. To make the cream sauce. Heat the butter and oil over medium heat. Add onions and cook for 5 minutes, until fragrant. Add the garlic and cook another minute. Stir in the tomatoes and season with salt and pepper. Stir and cook over low heat for 15 to 20 minutes, stirring occasionally until thickened slightly. Stir in the milk, parmesan, parsley, and basil, and cook another 10 minutes, until warmed through.
5. Bring a large pot of salted water to a boil. Boil the ravioli in batches about 1-2 minutes or until they float.
Drain.6. Divide the ravioli among bowls and spoon the tomato sauce over top. EAT and ENJOY!

Forget Taco TuesdayâŠthese Ampâd Up Tacos are for any night of the week! With only an hour to go until dinnertime, Luke and I just bought a flank steak on a whim (wait, donât you have to marinate that cut for 24 hours? Turns out you donât!) and used up all the veggies in the fridge and tortillas from the pantry.
Ampâd Up Taco Night
(a no-recipe recipe :)
For the steak:
Squeeze the juice of one orange into a marinating dish. Add a 2-lb flank steak and sprinkle generously all over with Carne Asada seasoning, garlic powder, onion powder and salt. Top with orange slices, white onion slices and coarsely chopped cilantro, and let marinate for 1 hour (or more). Sear each side 5 minutes on 500 degree grill, then cook to your liking (we went medium rare).
For the guac:
Mash 2 avocados together with about 1/4 cup chopped red onion, 1/2 cup chopped cilantro, 1/4 cup shredded cheese (any type), a healthy dash of garlic salt and the juice from half a small lime. (Yes, you read that rightâŠno tomatoes or salsa! This results in a rich, less watery guac that holds up well on tacos).
For the ampâd up tortillas:
Fry corn tortillas in about 1/4 inch oil and when they start to crisp, fold them over to form taco shells. Decadent but delicious!

And one bonus Favorite Thing!
Over the holiday break, I spent a week on a working farm in rural Nebraska, visiting âLukeâsâ family. His hometown, population around 3,000, doesnât have many restaurants, and his family has a long tradition of excellent cooks. Luke and I were fascinated as we watched his uncle make hash browns from scratch, using this grater with extra-large holes. Honestly friendsâŠI thought hash browns only came from a bag! So we promptly ordered our own coarse grater from Amazon, and have made these browns several times already. They are a game changer!
To make scratch hash browns, peel and coarsely grate 1 large baking potato. Squeeze out as much water as possible with paper towels.
Add some olive oil and butter to a medium-size skillet over medium-high heat, then add the grated potato, smoothing out and smashing it down slightly to form a pancake. Add salt and pepper. Cook until browned on the bottom, then add a couple pats of butter to the top, and flip it over, sprinkling on more salt and pepper. Continue cooking until browned on side 2. Serve with ketchup and topped with eggs!

Spicy Short Rib Peanut Ramen
âHot Lukeâ and I are on a bit of a ramen kickâŠand this week I learned an important trick. Instead of adding the ramen noodles into the crockpot as directed on the Half Baked Harvest site, I placed them dry into the serving bowls, poured the hot mixture over the noodles, and let it rest for 3 minutes before digging in. This way they were perfectly al dente - plus by storing the soup separately from the noodles, they didnât get mushy, so the leftovers were just as delicious!Â
Ingredients:
1. In the bowl of the crockpot, season the short ribs with pepper. Pour over the broth, coconut milk, and tamari. Add the chili paste, peanut butter, shallots, garlic, ginger, bay leaves, and cinnamon stick. Cover and cook on low for 6-8 hours or on high for 4-6 hours.
2. Preheat the broiler to high. Remove the short ribs from the crockpot and place onto a baking sheet. Break into a few chunks and discard any bones. Broil until caramelized on top, about 3-5 minutes, but watch closely.
3. Meanwhile, crank the heat on the slow cooker to high. Stir in the spinach and noodles and let cook, uncovered, for about 5 minutes. Stir in the short ribs.
4. Ladle the broth, short ribs, spinach, and noodles into bowls. Top as desired with kimchi, cilantro, green onions, chili oil, and sesame seeds. Serve immediately.

Braised Chicken Thighs with Leeks and Celery Root
This past Sunday we had a whole day free to cook, and Hot Luke had 2 cravings: Celery root and something sweet. So we whipped up this Braised Chicken Thigh dish he found on TheSophisticatedCaveman.com. An hour in the oven gave me lots of time to knit on my Trinigan swatch!Â
The addition of nutmeg, leeks and the humble celery root made a flavorful, filling, low-carb one pan meal. Then we restored our carb count with my homemade apple pie (my grandmotherâs recipe, but with a crumble topping I found online). Delish!Â

Iâm Shelley and this year I moved from Tulsa to Florida, fulfilling a lifelong dream of living on the water. I still visit Tulsa often to see my Knit Stars family and my family-family. In fact, Iâm writing this newsletter from Tulsa right now đ„°
My favorite project of the year was Ranunculus by Midori Hirose. It was such a fun project, I made two! This one using yarn botanically hand-dyed by Season 5 Knit Star Tatiana Sarasa - visiting her in Mallorca was a huge highlight of my year. My second Ranunculus was made in Merino Bouclé by La Bien Aimée for our current Hot Loops Wall.

 I know youâre probably expecting a holiday themed recipe, but Iâve been learning to BBQ with âHot Lukeâ and this week we made this delicious chicken. Maybe you can take a break from the kitchen after the holiday and grill this up outside (but it youâre in the Arctic blast area, youâll of course want to bundle up in all your handknits)!

Step 1
Combine all sauce ingredients in a small saucepan, bring to a simmer over medium heat and cook for 5 minutes.
Step 2
Build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. (For a gas grill, turn one of the burners down to low or off, lower cover and heat for 15 minutes.)
Step 3
Meanwhile, combine barbecue sauce with 1 cup water and stir to combine. Set aside.
Step 4
Sprinkle the chicken pieces generously with salt and pepper, then put them on the grill directly over the coals and cook for about 15 minutes, turning once every 5 minutes or so, and brushing with the thinned barbecue sauce. When the chicken skin starts to crisp and darken, move the pieces to the cooler side of the grill and let them cook for 15 to 20 minutes more, or until a peek inside shows that the meat no longer has any red at the center.
Step 5
Move the chicken back onto the hot side of the grill and baste with sauce again, turning the meat a few times. Remove to a warmed platter and serve.
Bonus recipe! Easy Grilled Onion
This is one of our go-tos for an easy grilled side dish. Simply slice off the top and bottom of an onion and partially core it out with a paring knife. Insert a beef bouillon cube into the hollowed-out center and top with a tablespoon of butter. Wrap in foil and grill at approximately 375-400 degrees for 20 minutes or until soft.

I donât know about you, but while I do set some intentions for the New Year, I also love reflecting back on the past year; to sort of run an evaluation of what filled my cup, what drained it, and what Iâd like to try next to keep it from going completely empty.Â
Because in both life and making, it is all too easy to lose that game of yarn chicken and be left feeling a little incomplete. How do we resolve to make ourselves whole again?Â
This past year, I was feeling some kind of burn-out creating things for myself and trying to keep up with the Instagram algorithm (still havenât caught my breath from that one). After each FO, I found myself feeling incomplete. Dissatisfied. Disappointed. Â
And then for Motherâs Day, I made a garment for my mom⊠and watching her open that gift was one of the most joyful memories Iâve had in my adult life She basically wrote the book on "how to receive a handmade gift". Summary of "book" below đ.
So I kept making for others. I made toys and hats for my nieces. I made baby gifts and wedding gifts. I made "just because" gifts. I knit and crocheted for hours and hours and found that even though the object I created was bound to leave me, each time it made it to its recipient, I started to become whole.
Does this mean that I think you should stop making for yourself? Oh absolutely NOT! HA! I already cast on 2 sweaters for myself, in fact - the second the last gift was done. I am just suggesting that while we set intentions for the year, you might think about how making fits into that âplanâ in a way that leaves you feeling better than you did before you cast on.Â
Today, I want to share 4 projects that I hope may inspire some making-joy in your life.Â
The Owasso Tee by Bobbi IntVeld (@bobbijknits) was the reason behind my momâs adorable little joy dance. This âteeâ is quite simple in construction and ok ok... there is a little seaming but it is worth it. This is a fantastic piece to layer on top of button-ups, long sleeves or even a dress. Try making this one with our Queensland Khatmandu Aran (on sale now!). You'll need 6 (6, 7, 8, 8)(9, 10, 11, 12) skeins for finished bust sizes 39 (43, 47Âœ, 50Âœ, 55) (59, 63Âœ, 67Âœ, 72) inches. The drape will be perfection. I made the size 43 finished bust size for my mom.Â
A 2022 make that I am seriously considering making a second time is the Outline Raglan by Jessie Mae (@jesssssiemae). I made mine out of our Plant-based Princess; a wool alternative that is soft on the skin and so breathable. This was my Rhinebeck sweater and one of my most worn sweaters of 2022 and of course, now carries the wonderful memories of time with fellow makers and friends. Youâll need 3 (3, 3, 4, 4)(4, 4, 5, 5) skeins to fit chest measurement of 28 (32, 36, 40, 44)(48, 52, 56, 60) inches. I'm wearing the size 3 in the photo above.

The Seafarerâs Cap by Alexi Tavel (@twoofwands) is an amazing staple toque. It has great structure and stretch created by the ribbing, so itâll fit a wide range of heads. Truly a perfect gift knit. This hat is effortlessly cool and sure to be loved by anyone who receives it (orrrr you if you decide to keep it for yourself which I highly recommend). Try making this one in our Loops Luxe Chunky which is on sale now! Youâll need 2 skeins of Loops Luxe Chunky for this one-size-fits-most hat.
The JOY that is sparked every time I see my husband wearing this piece is on another level. This is a sweater he always reaches for; so much so that his hockey teammates have requested I make them one! (Iâm nice but not that nice). The Hot Toddy Hoodie by Chantal Miyagishima from @knitatude is a raglan with a hood that is so classic and comfy. I may try to make myself one out of Mitchellâs Bayou Worsted from one of the amazing colors in stock. My favorite part of this sweater? The i-cord drawstring (and the cutie who is wearing it in the pic above!)

Looking forward, Iâve created my âmake-6â. Iâve seen this trend on Instagram where people create a 3x3 grid (9 projects in all) they intend to finish in a year. Iâve reduced mine down to a make-6 which gives me 2 months to finish a project but am allowing myself tons of grace to continue following the path of what feels good in making. For the recipe today, I couldnât think of a better meal to share that one that I have had EVERY Jan 1 since I can remember! During the pandemic, I learned how to make this from my mom since we couldn't be together and I'm so grateful! Dduk guk is a traditional Korean soup that is eaten as a tradition to celebrate the New Year. I actually used to call it âgood luck soup!â when I was a kid. This warm, mild, simple soup is believed to add another year to your life. The chewy rice cakes are so delicious! This recipe is from one of my favorite Korean foodies, Maddy from Cafe Maddy!
