Renee Hahnel created Spun Right Round Yarns back in 2009 as a part-time operation, offering hand-dyed fiber and handspun yarn, all out of a small cabin in Central New York. Over the years, the business has grown into a studio space that is now located in Rochester.

Sea Scallop Carbonara from Elevate Your Plate has a just handful of ingredients that will have you ohhhing and ahhhhhing like a skein of hand-dyed cashmere!
Ingredients:
3-5 Sea Scallops
3 Oz Chopped Bacon
Linguini
Pasta Pot liquid
1 Egg
4 Oz Grated Parmesan
1 tsp Garlic Powder
Salt & Pepper to season
Directions:
1. Boil water in a deep pan.
2. In a large skillet sauté bacon on medium heat, until crispy.
3. In a small mixing bowl lightly whisk the egg; then whisk in grated cheese, garlic and salt and pepper. Set aside.
4. When water is boiling add the pasta, but be sure that the bacon is at least halfway cooked. When it's crispy, take it off the heat, and add one or two ladles of the pasta water. In a small skillet add some of the rendered pork fat and sear the scallops on a medium-high heat. Season with salt and pepper on either side. Reduce heat after each side has some caramelization.
5. Strain pasta when al dente, and add to large skillet with the pancetta. Evenly coat pasta. Add the egg and cheese mixture, be sure to remove from heat. When everything is evenly coated return to a low heat to temper the egg.
Taste to season, and garnish with your seared scallops!
